So why does this matter? Every cell membrane in your body is made of lipids, and your body will use the lipids in your diet to build those membranes. Building membranes with highly reactive lipids leads to membranes that behave improperly.
Consider what happens when you disturb the membranes of the mitochondria, a double-membrane-bound organelle involved in energy production and steroid hormone synthesis. If the membranes don’t work, you don’t get energy and don’t get hormones. Mitochondria are especially susceptible to lipid peroxidation because they’re the main site of hydrogen peroxide production.
Your MOTS-c and SS-31 are just band-aids on broken membranes due to years of exposure to foods we were never meant to consume im the quantities we’ve inadvertently exposed ourselves to.
Let’s talk about polyunsaturated fatty acids (PUFAs) and why they’re so problematic.
Ray Peat advised avoiding PUFAs because they become easily oxidized in certain situations.
The key characteristic of PUFAs is the number of bis-allylic carbons along the hydrocarbon chain tail—these are the methylene groups (-CH₂-) between doubly bonded carbons. Their position weakens the carbon-hydrogen bonds, making them susceptible to radical peroxidation chain reactions that produce biologically toxic byproducts. The more bis-allylic methylene groups, the more prone to peroxidation the lipid becomes.
The chain reaction starts when free iron (Fe2+) cations react with hydrogen peroxide (a normal metabolic byproduct) to form a hydroxide ion and hydroxyl radical via the Fenton reaction. The hydroxyl radical initiates the process by abstracting a hydrogen from the weak C-H bond, creating a lipid carbon radical. This rapidly reacts with molecular oxygen to form a lipid peroxyl radical, which then strips another bis-allylic hydrogen, propagating the chain.
Lipid peroxidation thus has two steps: initiation via the Fenton reaction and propagation.
To stop initiation, keep free unbound iron levels low. To stop propagation, an antioxidant like vitamin E can donate a hydrogen to the lipid peroxyl radical, quenching the chain.
In seeds, PUFAs are packaged with antioxidants like tocopherols that prevent peroxidation. The issue arises when isolating the oils. Even though PUFAs occur naturally in the body, such as in the testicles where vitamin E was discovered as a fertility factor (tocopherol from Greek “tocos” for offspring and “pherein” to bear), vitamin E’s antioxidant nature protects these lipids from peroxidation, preserving fertility.
Another PUFA source is cold-water fish, which use them to maintain membrane fluidity: more unsaturated bonds lower the freezing point due to less efficient packing of the tails. Fish employ selenium, glutathione, astaxanthin (the orange pigment in salmon, shrimp, and krill), and vitamin E to prevent PUFA peroxidation.
This explains why Ray Peat promoted milk, high-mineral-content seafood, vitamin E, and orange juice as remedies for modern metabolic issues stemming from PUFA lipid peroxidation.
Peaty Food Breakdown:
1. Milk is low in iron, a pro-oxidant, yet high in bioavailable protein. Lactoferrin also binds iron in the gut. Low PUFA, with the main fats being saturated which are very stable at body temperature.
2. Liver contains iron but also antioxidant minerals to prevent excessive oxidation.
3. Seafood provides selenium for selenocysteine, which forms glutathione peroxidases (glutathione is the body’s master antioxidant) and deiodinase enzymes that convert T4 to active T3. PUFA in fish is not an issue because the antioxidant minerals prevent peroxidation—however, fish oils are problematic for the exact same reason seed oils are problematic: PUFA divorced from antioxidants.
4. Orange juice supplies vitamin C, which counters the toxic effects of free iron in blood.
