FDA has approved up to 30 kGy for dry spices, herbs, and seasonings for microbial control. Lower doses are used for other purposes like insect control in wheat and flour. They’ve even used higher for pathogens in meat and poultry

Irradiation does not make food radioactive but it does damage microbial DNA to kill and inactivate pathogens
