@DavidPerlmutter Try the super convenient Niçoise salad with canned tuna, black olives, potatoes, white or red beans, eggs, tomatoes, and a little green salad" or my mother's warm vegetable salad "green beans, potatoes, and garlic". Both recipes with plenty of oil and a little balsamic vinegar.
@DavidPerlmutter However, since I learned that even in extra virgin cold-pressed oil, the level of polyphenols can vary greatly from low to high (apparently recognizable by the spicy and slightly bitter taste), I use oils where polyphenols are measured and with a significant content.

In the blue zones, all the centerians have a 100% plant based diet or a really minimal consumption of animal proteins.

@mario_kratz I do very regular cardio and muscle resistance training. My diet is very low in salt and saturated fat (no butter, no dairy products, no convenience food, lots of vegetables, rarely red meat, lots of fish and lean meat, ...).
@mario_kratz I tried to ask my doctor in Germany to measure ApoB, but he didn't know and refused to do it. These values are important to me because I have a high LDL (175) and high cholesterol values (248) vs. a good HDL value (59) and very low triglyceride values (57).
@mario_kratz Hello Mr Kratz, frankly, I have never heard such a didactic explanation on the subject. I have realised the importance of measuring ApoB and Lp(a) thanks to podcasts such as The drive and Sigma nutrition, but now I have understood a lot of things.

Shouldn't the TEE be stable? Would you be so kind as to help me understand?
