@bendreyfuss So the French, custard-based ice creams are a pain in the ass, but honestly, you can get the same richness and texture with American-style (no egg) ice creams. I've found a great texturizing agent, that I won't share, but it's not as hard as you think if you avoid eggs.

@whstancil I say this as someone who kind of maxed out on STEM, but we need to de-emphasize stem and return to an educational ethnic of well-roundedness. As it is now, we're taking 6 YOs who show an aptitude for remembering stuff, and segregating them intellectually with real consequence.
