There are multiple versions of it, the two most common in Switzerland being: Viande Séchée du Valais (AOP) and Bünderfleisch (AOP) also called viandes des Grisons.

@The__Taybor Raclette. Should be made (not always the case) from the AOP cheese called Raclette du Valais. It's normally not served like this but rather with potato and some cornichons. And white wine.

Pas d'aide/info pour les hôtels etc.
