@tanpukunokami Thank you for this. I have only known about Nigiri and Maki. I most exotic Maki I have tried had BBQ eel. I was skeptical but encouraged by a Japanese friend to try it. It was amazing. I hope to someday try sushi in Japan, perhaps one of the other styles you mentioned.
Most foreigners think sushi means one thing:
raw fish
on a small ball of rice.
But in Japan, sushi has many forms.
🟢There is nigiri — the famous one, with fish, egg, or other toppings placed on hand-pressed vinegared rice.
🟠There is maki — sushi rolled in seaweed, like tuna rolls, cucumber rolls, and thick festival rolls.
🔴There is gunkan — “battleship sushi,” wrapped with seaweed so soft toppings like salmon roe or sea urchin can sit on top.
🟡There is chirashi — vinegared rice covered with colorful toppings, often eaten on special days.
🟣There is inari — sweet fried tofu filled with sushi rice. No raw fish at all. Still sushi.
⚪️There is oshi-zushi — pressed sushi, shaped in wooden molds, often found in western Japan.
And then there is nare-zushi — one of the ancestral forms of sushi, made by fermenting salted fish with rice.
So sushi was not born only as luxury.
It began with preservation.
A way to keep fish through time.
Then it became street food.
Then family food.
Then celebration food.
Then global food.
That is why sushi is so fascinating.
It is not just raw fish.

@tanpukunokami I'm not Japanese so I do not fully understand the importance of these temples. However, I have always wanted to visit Japan and see some of the temples as they are culturally very significant. It always seems like the same people from a certain place who burn such things.
