Most kitchen waste isn't waste — it's an ingredient or a resource that leaves the kitchen before it's been fully used. These twelve swaps keep food and byproducts working longer.

Carrots and Celery in a Container → Store Upright in a Jar of Water
Submerging cut carrots and celery stalks upright in a jar of cold water keeps them crisp for up to two weeks — significantly longer than a sealed container or bag.
Lemon Peels in the Trash → Soak in Vinegar for a Natural Cleaner
Pack a jar with used lemon and citrus peels, cover with white vinegar, and let sit for two weeks. Strain and dilute 50/50 with water for a citrus-scented all-purpose cleaning spray.
Wilting Herbs → Freeze in Olive Oil Cubes
Before fresh herbs wilt, chop them and pack into ice cube trays with olive oil. Freeze solid and transfer to a bag. Drop cubes directly into soups, sauces, and sautés from frozen.
Apple Cores → Homemade Apple Scrap Vinegar
Pack apple cores and peels into a jar, cover with water and 1 tbsp sugar. Let ferment loosely covered for 3–4 weeks, stirring occasionally. Strain and use as a household cleaning vinegar.
