I talked with a few people from the camera team, and they mostly stick to the default camera app since it has manual control that iPhone lacks (That's why they require third-party apps like Blackmagic Camera), and they shoot in either LOG or HDR, handheld with a rig or with a gimbal, depending on the footage.
So, yes, not only can Samsung smartphones do it, but they can do it great without the need for third-party apps π
