I do the opposite of almost everything the “experts” tell me.
I eat eggs every day.
I eat fatty red meat and bacon.
I cook with real butter.
I salt my food.
I eat liver.
I avoid seed oils.
I don’t buy low fat products.
I don’t count calories.
I eat until I’m full.
I don’t snack.
And yes, my LDL cholesterol is high.
Apparently that alone is supposed to terrify me.
Never mind that my triglycerides are low.
Or that my HDL is high.
And my blood sugar is better than when I followed the “balanced diet” advice.
One number goes up and suddenly I’m treated like a ticking time bomb.
That logic falls apart the deeper you look at it.
LDL is a lipoprotein. Your body produces it deliberately. It carries cholesterol, fat-soluble nutrients, and repair materials to every cell that needs them. It is not a toxin looking for somewhere to do damage.
When you eat low carb and burn fat for fuel, lipid transport changes. Of course it does. The system is doing exactly what it is supposed to do.
But instead of asking why LDL changed, the entire conversation becomes fear.
Statin.
Low fat diet.
Eat the carbs.
Avoid the red meat.
LDL as a single number tells you almost nothing useful without knowing your triglycerides, your HDL, your blood sugar, and your inflammatory markers. Every individual picture is different. Mine looks very different from the risk profile that one number implies.
Meanwhile the people following official advice are more overweight, more diabetic, more inflamed and more medicated than ever before.
That should raise more questions than my LDL number.
The cholesterol story sold to the public is one of the biggest health scares in modern medicine.

Why “Woman” and not “Mother”?
Because Jesus was intentionally pointing back to the very beginning, to Eve, the first woman.
In the Garden of Eden, Eve (the woman) listened to the serpent and brought sin and death into the world through disobedience.
But Mary, the New Eve, listened to the angel and said, “Let it be done to me according to your word” bringing the Savior into the world through perfect obedience.
When Jesus calls Mary “Woman,” He is declaring:
“Here is the New Eve. Through you, the woman, redemption begins.”
Just as Eve was the mother of all the living in the old creation, Mary becomes the spiritual mother of all the living in the new creation. At the Cross, Jesus gives her to us as our Mother when He says to the beloved disciple (and to all of us): “Behold your mother.”
This is why the Church has always honored Mary, not instead of Jesus, but because of Jesus. She is the perfect model of faith, the woman who crushed the serpent’s head by her “yes” to God.
Before 1850: all milk was raw, drunk by the gallon, and considered medicine.
Before 1900: everyone ate eggs, beef, and butter without a single thought about cholesterol.
Before 1910: every household used salt to preserve meat and fish through the winter.
Before 1920: everything was cooked in tallow, lard, dripping, and butter.
Before 1950: there was no obesity epidemic, no diabetes epidemic, no childhood ADHD diagnosis on every street.
Now consider the timeline.
The seed oils arrived. The margarine arrived. The breakfast cereal arrived. The low-fat yoghurts arrived. The packaged convenience food arrived. The supermarket aisles filled up with products that had no equivalent on a 1900 dinner table.
And the experts are still trying to convince you that chronic disease is caused by the foods that fed humanity for the entire stretch of recorded history.
Not the new arrivals. The old reliables.
Have a think about who benefits from that conclusion.
The carnivore hierarchy isn't ribeye at the top.
It's ground beef.
You're getting amino acids from the muscle, collagen and glycine from the connective tissue, and a fat ratio that actually fuels you rather than leaving you starving an hour later.
It's the trim from every cut, blended into one.
The cheapest thing in the meat aisle is also the most complete.
Aldi. Tesco. Whichever pack is on offer.
That's the diet.
The boutique steak crowd are paying a premium to eat less of the cow.
The most subversive dietary act in 2026:
Eat fatty meat until you are full.
Stop eating when you are full.
Do not eat again until you are actually hungry.
No app.
No macro split.
No eating window.
No meal prep.
No plan.
The food industry invests enormous resources in engineering food that provides calories without completing the satiety sequence. That keeps you hungry after eating. That causes you to eat again before your body has finished using what it already has.
Fatty animal food does the opposite.
It completes the sequence.
It tells the brain the meal is over.
It is, from the perspective of the snack industry, profoundly inconvenient.
Eat until done.
Stop.
The hunger does not come back for a surprisingly long time.
