My oil rule is simple:
Use EVOO or avocado oil by default.
Choose high-oleic oils when you want neutral flavor.
Fresh conventional seed oils are not poison.
Avoid rancid or repeatedly heated oil.

Regular sunflower is rich in easily oxidized linoleic acid.
High-oleic sunflower contains much more stable monounsaturated fat and holds up better under heat.
That is why “seed oil” is too crude a category.
