@kitchengrump Cooking is too human with so many intricacies to truly replicate with AI but being able to pull from any recipe can be a solid base but you gotta learn why if that makes sense.
@kitchengrump@binaryADD As for injecting meats with water weight, that’s not something I’ve ever done at work (but have heard of it being done). Injecting brine from my experience has just been on processed/cured meats (smoked turkeys, corned beef, bacon, etc).
@kitchengrump@binaryADD Every shop I’ve worked at, the mince was 100% that. Just pure meat and fat in the proper ratios. To get as much “liquid” that came off from the article looks like it’s more regular ground (30% fat) or medium ground (23% fat) opposed to lean (17% fat).
