A perfect grade Ocarina of Time is:
1. Artstyle is the art you see below but 3D modeled. With the gradient lighting, toon lines. Literally you should be able to replicate the pose you see here but in 3d (and yes, there's proof of this being possible)
2. Reimagine the combat to be like Twilight Princess. Enemies engage with more meaning, solutions to the combat can quicken the fights, sword fighting moves can be obtained by side quests.
3. Exploration should rip out a tiny corner from Breath of the Wild. And by that I ONLY mean that players should still be able to explore off the intended main story path. But unlike the Ocarina of Time original. This version should be loaded with things to do for making that choice. Visited Zora river before going to Hyrule marketplace for the first time? Have a Zora offer an item to take to the Hyrule market place shop for a reward.
This will alleviate new players frustration with failing to find the right path. Ease back on the right path. And be perceived as extra content for returning players.
4. Add. But don't take away.
Don't censor or brighten the darker elements of Ocarina. But feel free to add things over time that might feel empty or barren. Hyrule Field for example can start off as Hyrule Field as we've always known. But there's plenty of space in there to occupy with quests, characters, or a sense of lived lives amongst existing characters.
It's unfortunate, but I fear that Nintendo is going through late growing pains. A lot of other publishers/ devs have already gone through the detail porn, ultra-lit, ultra-high-res texture phase back in the mid 2000s. Some of them kept going and never looked back, but the reason why we have so many beautiful indie games or even gorgeous IPs like Splatoon is because some artists stayed true to the old ways of creating bold and iconic characters that pop on masterfully balanced and crafted backgrounds. Seems like too many devs right now are trying to push hardware to appease the wrong people instead of staying true to their own philosophy of design.
