4 boneless, skinless chicken breasts
½ cup goat cheese, softened
½ cup dried cranberries, roughly chopped
1 cup fresh arugula
2 tbsp olive oil
2 garlic cloves, minced

Salt and pepper, to taste
Toothpicks or kitchen twine
Directions:
Prep chicken: Preheat oven to 400°F (200°C). Slice each chicken breast horizontally to create a pocket without cutting all the way through.
Stuff chicken: Fill each pocket with goat cheese, cranberries, and arugula. Secure with toothpicks or tie with kitchen twine.
Season: Rub chicken with olive oil, garlic, thyme, salt, and pepper.
Sear: In an oven-safe skillet, sear chicken breasts over medium-high heat for 2–3 minutes per side until golden.

Golden seared scallops meet a zesty medley of cherry tomatoes, olives, and capers — light, fresh, and packed with Mediterranean flavor in every bite!
📋 Ingredients:
12 large sea scallops (side muscle removed)
Salt & freshly ground black pepper, to taste
2 tbsp olive oil
1 tbsp unsalted butter
2 garlic cloves, minced
1 cup cherry tomatoes, halved
⅓ cup Kalamata olives, halved & pitted
2 tbsp capers, drained
¼ cup dry white wine
Juice of 1 lemon
¼ cup fresh parsley, chopped
Lemon wedges, for serving
👩🍳 Instructions:
1️⃣ Pat scallops dry and season both sides with salt & pepper for a perfect golden crust.
2️⃣ Heat olive oil in a skillet over medium-high. Sear scallops 2 mins per side until golden, then remove and set aside.
