𝗔𝟭 𝘃𝘀 𝗔𝟮 𝗠𝗶𝗹𝗸

🔵 Cattle Milk is about 85-87% Water & rest solids (protein, fat, lactose, minerals).

🔵 The protein itself is of 2 main types: Whey & Cassein

🔵 Cassein makes up around 80% of the total milk protein, 20% whey.

🔵 When acid & heat is applied, Cassein is the protein that coagulates & solidifies. Whey stays as liquid.

🔵 This liquid when processed & dried is what is your whey supplement.

🔵 Cassein itself is of 3 types: Alpha, Beta, Kappa cassein

🔵 Beta Cassein is protein made of a chain of 209 amino acids folded together.

🔵 Again, Beta Cassein is subdivided into 3 types: A1, A2, A3. A1 & A2 are most common.

🔵 So when you hear A1 milk, A2 milk, it basically stands for the milk protein it contains.

🔵 The difference between A1 cassein & A2 cassein is just one Amino acid in the whole chain of amino acids.

🔵 In A1 cassein, the amino acid at position 67 in the chain is Histidine, whereas in A2 it is Proline. That makes all the difference.

🔵 Because of Histidine in position of Proline, the bond is weaker & when digested a group of 7 amino acids (called peptide) before it break out. This set of 7 amino acids is called BCM-7.

🔵 BCM-7 (Beta Casomorphin-7) is structurally similar to Gluteomorphin (from Wheat gluten) & have similar effect on the Gut. Which is why many with Gluten sensitivity also have Dairy sensitivity too.

🔵 A2 Cassein was the orginal beta Cassein. A1 Cassein came as a genetic mutation.

🔵 A1 cassein or BCM-7 specifically is Inflammatory in nature.

🔵 A lot of Health problems including Autoimmune issues have been linked to A1 cassein.

🔵 If you have Autoimmune conditions, Autism or gut related issues, stay away from A1 dairy (or dairy altogether)

🔵 Cross breed cows like Holstein Friesian, Swiss brown etc produce A1 milk (A2 is also present).

🔵 Indigenous breed cows (Desi cows), Goat, Buffalo, Yak etc produce A2 milk.

🔵 Lactose Intolerance & Milk sensitivity are not the same. Lactose is a Carbohydrate, sensitivity is for Protein (Cassein).

🔵 There isn't any meaning in A1/ A2 for Ghee, because Ghee is pure fat & there is no protein in it.
