Her confusion is very common for people reading the Quran for the first time without looking at the traditional commentaries, known as Tafsir.

When Surah 2:62 talks about Jews, Christians, and Sabians receiving their reward, it is not teaching universalism. It is not saying that in the present day, all these religions are equally valid paths to heaven.
Classical scholars explain this verse through the timeline of prophets. Islam teaches that God sent many prophets throughout history.
Before Prophet Muhammad was sent, the followers of Moses who stuck to his original teachings were on the right path. They will be rewarded. The same goes for the true followers of Jesus before the final message came. They were the true believers of their time.
However, once the final revelation was given to Prophet Muhammad, the requirement for salvation includes accepting the final messenger. You cannot reject the final chapter of God's message and still be following the complete path.
Another key point is the definition of belief. The verse specifically says "those who believe in Allah." In Islam, belief in Allah requires pure monotheism. It means believing in One God without any partners.
Doctrines such as the Trinity or viewing Jesus as the son of God contradict this strict monotheism. A person holding those specific beliefs would not fall under the Quranic definition of believing in Allah.
The verse is a profound statement of divine justice. It reassures people that God will not waste the good deeds of sincere believers from the past who followed the truth available in their eras.
