Spaghetti all’Assassina, or “The Killer Spaghetti,” was born in Bari in the 1960s, right inside a small restaurant called Al Sorso Preferito. Legend says it got its name because it was so spicy and intense, it could “kill” your taste buds.

What makes it special? The pasta isn’t boiled... it’s cooked directly in tomato sauce, layer by layer, until it becomes crispy, caramelized, and just a little bit burnt on the edges. That’s what gives it its iconic smoky, bold flavor.

Over time, this fiery recipe became a symbol of Southern Italian creativity... simple ingredients, fearless flavor, and pure passion on a plate .
