Oven-Baked Feta Potatoes
Ingredients
4 medium potatoes, cubed
3 tablespoons olive oil
1 teaspoon garlic powder
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and black pepper, to taste
1/2 cup feta cheese, crumbled
2 tablespoons fresh parsley or basil, chopped
Optional: chili flakes and lemon juice for extra flavor
Instructions
Preheat oven to 425°F (220°C).
Add cubed potatoes to a large bowl.
Toss with olive oil, garlic powder, minced garlic, oregano, paprika, salt, and pepper until evenly coated.
Spread potatoes on a baking sheet in a single layer.
Roast for 35–40 minutes, flipping halfway through, until crispy and golden brown.
Transfer hot potatoes to a serving bowl.
Sprinkle generously with crumbled feta and fresh herbs.
Add chili flakes or a squeeze of lemon juice if desired.
Mediterranean Salmon Patties
Ingredients
1 pound salmon fillet, cooked and flaked
1 cup fresh spinach, chopped
1/3 cup feta cheese, crumbled
1/4 cup onion, finely diced
2 garlic cloves, minced
1/2 cup breadcrumbs
1 egg
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
Salt and black pepper, to taste
Olive oil, for frying
Instructions
In a large bowl, combine flaked salmon, spinach, feta, onion, garlic, breadcrumbs, egg, lemon juice, parsley, oregano, salt, and pepper.
Mix until fully combined and shape into patties.
Heat olive oil in a skillet over medium heat.
Cook patties for about 4–5 minutes per side until golden brown and crispy.
Transfer to a paper towel-lined plate.
Serve warm with lemon wedges, tzatziki, or a fresh salad.

4 cod fillets
3 tablespoons olive oil
3 garlic cloves, minced

Instructions

Instructions

Instructions

10 ounces mixed baby greens

Ingredients
Vegetables
2 cups broccoli florets
1 cup carrots, sliced
1 cup mushrooms, halved
1 cup baby corn
1 small onion, sliced
2 cloves garlic, minced
1 tbsp ginger, minced
Sauce
1 ½ cups chicken broth or vegetable broth
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1 tsp sugar
½ tsp white pepper
1 tbsp cornstarch + 2 tbsp water (slurry)

Snow peas
Bok choy
Water chestnuts
Chicken, shrimp, beef, or tofu
Instructions
Prepare the vegetables
Wash and cut all vegetables into bite-sized pieces.
Blanch broccoli (optional)
Boil broccoli for 1 minute, then transfer to ice water to keep it bright green.
Cook aromatics
Heat 2 tbsp oil in a wok or large skillet over medium-high heat.
Add garlic and ginger. Stir-fry for 30 seconds until fragrant.
Stir-fry vegetables
Add onions, carrots, mushrooms, and baby corn.
Cook for 3–4 minutes.
Add broccoli and any softer vegetables last.
Make the sauce

Ingredients
500g (1 lb) large shrimp, peeled and deveined
3 tbsp cornstarch
Salt and black pepper, to taste
2 tbsp olive oil or vegetable oil
3 tbsp butter
5 garlic cloves, finely minced
1 tsp chili flakes (optional)
1 tbsp soy sauce
1 tbsp lemon juice
1 tsp honey
2 tbsp chopped parsley or green onions
Lemon wedges, for serving
Instructions
Pat the shrimp dry with paper towels. Season with salt and black pepper.
Lightly coat the shrimp with cornstarch. Shake off any excess.
Heat the oil in a large skillet over medium-high heat.
Add the shrimp in a single layer and cook for 2–3 minutes per side until crispy and golden. Remove and set aside.
Lower the heat to medium. Add the butter and minced garlic to the same pan. Cook for about 30 seconds until fragrant.
Stir in the chili flakes, soy sauce, lemon juice, and honey.
Return the shrimp to the pan and toss well to coat in the garlic butter sauce.
Sprinkle with parsley or green onions and serve immediately with lemon wedges.
