The USDA estimates the U.S. wastes 30 to 40 percent of its food supply, worth $161 billion in 2010 alone.
That waste includes the water, farmland, and fuel used to grow, process, and transport food that never gets eaten.
Centralized production adds distance and time between harvest and plate, a key driver of spoilage.
Shorter supply chains mean fresher food and far less waste.
