Herb-Crusted Lamb Chops with Creamy Mustard Sauce 🥩🌿

Serves 4
Ingredients
For the lamb:
8 lamb loin or rib chops
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme leaves
1 tbsp fresh parsley, chopped
1 tsp Dijon mustard
½ tsp freshly ground black pepper
½ tsp salt
For the creamy mustard sauce:
1 tbsp butter
1 small shallot, finely minced
1 cup heavy cream
2 tbsp Dijon mustard
1 tsp whole-grain mustard
½ cup beef or chicken stock
1 tsp Worcestershire sauce
½ tsp fresh thyme
Salt and black pepper, to taste
1 tbsp chopped parsley
Method
Marinate the lamb:
Pat the lamb chops dry. Combine olive oil, garlic, rosemary, thyme, parsley, Dijon mustard, salt, and pepper. Rub the mixture generously over both sides of the chops. Let them rest for 20–30 minutes.
Sear the chops:
Heat a heavy skillet over medium-high heat. Add a little olive oil and sear the lamb for about 3–4 minutes per side, depending on thickness and desired doneness. Sear the edges briefly as well.
Rest the lamb:
Transfer the chops to a plate and loosely cover with foil. Let them rest for 5 minutes so the juices redistribute.
Make the sauce:
Reduce the skillet to medium heat and add the butter. Sauté the shallot for 1–2 minutes until softened. Add the stock and Worcestershire sauce, scraping up the flavorful browned bits from the pan.
Add the mustard and cream:
Stir in Dijon mustard, whole-grain mustard, and thyme. Pour in the cream and simmer gently for 3–5 minutes, stirring occasionally, until the sauce becomes silky and slightly thickened.
Season:
Taste and adjust with salt and freshly ground black pepper. Stir through the parsley just before serving.
Serve:
Arrange the lamb chops over the creamy mustard sauce and garnish with fresh thyme and parsley. Serve alongside creamy mashed potatoes, roasted asparagus, and blistered cherry tomatoes for a beautiful complete meal.
Tips:
For the best crust, make sure the lamb is thoroughly patted dry before seasoning and allow the skillet to become properly hot before searing. 🥩🌿
