2 15 oz cans of 100% pumpkin
2 cans of coconut milk
1 cup broth of your choice (vegetable broth is the default)
5 cloves of garlic, minced
1 1/2 tablespoon curry powder
1/2 teaspoon salt
2 teaspoons ground cumin
1/4 teaspoon black pepper
@caz_tastrophe@AmmoniteInk saute the garlic in a bit of the broth, then add the rest of the ingredients in a large pot, mix well. In the instant pot this is where I set it for 10 minutes on manual, but if not using that, it just needs to be cooked for as long as you can stand it, stirring every so often.
