The occasional cut to the rules expert guy is fine, necessary.
But your audience would be way more interested in the occasional cut to an equipment guy.

rainbow chard. trim the hard/woody stem out the middle, stack a bunch of leaves on top of each other, roll like a joint, cut into 3/4" strips
dice a shallot and mince garlic, just mix them together and set aside
@thepring13 when the wine's reduced a bit more than half, take the lid off, toss the chard around a bit, and drop in a couple cubes of butter. keep it on the heat and keep it moving, the butter will emulsify into the wine redux. season with salt and blk pepper, toss it and let it sit on LOW
@thepring13 cold pan, little bit of neutral oil. shallots and garlic. medium low heat. let them sweat a bit, no color on the garlic. just go until it starts smelling good. throw in the chard strips. pour in the wine. cover the pan. let the wine reduce and steam the chard
@thepring13 white wine, dry, go sauv blanc. 1/4 cup. doesn't really matter. a little more a little less. open the bottle in front of her and pour her a glass, even if she already has a drink.
couple small (1/2") cubes of COLD butter, keep it in the fridge
These are so goated. I could eat 300 of these in 1 sitting growing up. Still can. Toaster oven or oven only. No microwave. Don’t ever disrespect bagel bites in the microwave.
If you’re fully off the booze or the dust, why? What made you get off it. Just had a bartender 5 years off the booze. Said she had a major issue inside an Applebees on Long Island that made her quit. Interesting
