Mini Cinnamon Roll Cheesecakes

Ingredients
For the Crust:
1½ cups graham cracker crumbs (or crushed cinnamon grahams)
3 tbsp granulated sugar
1 tsp ground cinnamon
6 tbsp unsalted butter, melted
Pinch of salt
For the Cheesecake Filling:
16 oz (450g) cream cheese, softened
½ cup granulated sugar
¼ cup brown sugar, packed
2 large eggs, room temperature
¼ cup sour cream
1 tsp vanilla extract
1 tsp ground cinnamon
2 tbsp all-purpose flour
For the Cinnamon Swirl:
3 tbsp unsalted butter, melted
⅓ cup brown sugar, packed
1½ tsp ground cinnamon
For Topping:
Ground cinnamon, for dusting
Optional: cream cheese glaze (2 tbsp cream cheese + ¼ cup powdered sugar + 1 tbsp milk)
Instructions
Prep the pan. Preheat oven to 325°F (165°C). Line a 12-cup muffin tin with paper liners.
Make the crust. Mix graham cracker crumbs, sugar, cinnamon, melted butter, and salt until evenly moistened. Press about 1 tbsp into the bottom of each liner, packing firmly. Bake 5 minutes, then set aside.
Make the swirl. Stir melted butter, brown sugar, and cinnamon together until smooth. Transfer to a small zip bag and set aside.
Make the filling. Beat cream cheese with both sugars until completely smooth, 2–3 minutes. Add eggs one at a time, mixing on low. Add sour cream, vanilla, cinnamon, and flour. Mix just until combined — don't overbeat.
Assemble. Divide filling among the cups, filling each about ¾ full. Snip the corner off the swirl bag and pipe a spiral over the top of each. Use a toothpick to swirl gently — just 2–3 passes, don't overmix or you'll lose the spiral.
Bake 18–22 minutes until the edges are set and the centers still have a slight wobble.
Cool and chill. Cool in the pan 20 minutes, then refrigerate at least 3 hours (overnight is best).
Finish. Dust with ground cinnamon just before serving. Add a drizzle of cream cheese glaze if you like.
Tips
Room-temp cream cheese and eggs give you a lump-free, silky filling.
Don't over-swirl — the spiral look disappears if you stir too much.
Slight wobble is correct — they firm up completely in the fridge.
Variations
Add a layer of cinnamon streusel between crust and filling for extra crunch.
Swap graham crumbs for crushed cinnamon cereal for a bolder spice note.

Ingredients
For the Flatbreads:
4 flatbreads, naan, or 1 lb pizza dough divided into 4 pieces
2 tbsp olive oil
8 oz (225g) Brie cheese, rind removed, sliced or torn
¾ cup whole-berry cranberry sauce (or leftover cranberry relish)
1 pear, thinly sliced (optional but delicious)
¼ cup sliced almonds
2 tbsp fresh thyme leaves, plus sprigs for garnish
For Drizzling:
2 tbsp honey
½ tsp flaky sea salt
Fresh cracked black pepper
Instructions
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Prep the base. Brush each flatbread lightly with olive oil. If using pizza dough, stretch into 8-inch rounds and place on the prepared sheet.
Add toppings. Distribute Brie slices evenly across the flatbreads. Dot with spoonfuls of cranberry sauce. Add pear slices if using, then scatter sliced almonds and fresh thyme over the top.
Bake 12–15 minutes until the crust is golden and crisp at the edges and the Brie is fully melted and bubbling.
Finish. Remove from oven. Drizzle with honey, sprinkle with flaky sea salt and cracked black pepper. Garnish with fresh thyme sprigs.
Serve warm, cut into wedges or strips.
Tips
Chill the Brie before slicing — cold cheese is far easier to cut cleanly.
Leave a small border — cheese spreads as it melts, and a bare rim gives you a crisp handle.
Sweet meets salty — the flaky salt at the end is what makes it taste finished, not flat.
