Today marks 7 years since I last saw my dad, as he passed away.
Whilst today is an annual reminder of how much I miss him, he is my inspiration for all I have achieved and know he would be so proud.

@euanspeaks Personally my fam love a good veggie Wellington!! We make the recipe for the filling ourselves but it's usually mushrooms, chestnuts/walnuts, leeks, any other veggies ya fancy (+blue cheese if not vegan) and a white wine sauce!

It's so crazy how much your mental health changes everyday. One moment I'm absolutely fine with job rejections and can rationally understand that all jobs are in high demand right now. But the next day I just come to the conclusion that I'm never going to be good enough for any.
