Monash University is hosting the 10th International Symposium on 'Delivery of Functionality in Complex Food Systems' 2023. This year DOF will have a special emphasis on sustainability (incl. alternative proteins) and analysing their functionality.
This includes techniques to measure physicochemical, sensory and nutritional properties. The conference topics will therefore focus on meat, seafood, milk, egg, yoghurt, cheese, and their analogues, as well as life cycle analysis and analytical techniques.
