Mediterranean Baked Fish
Ingredients
2 white fish fillets (cod, haddock, halibut, or sea bass)
1 cup cherry tomatoes
1/2 cup pitted green olives
4 garlic cloves, minced
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tsp dried oregano
2 tsp chopped fresh parsley
3 sprigs fresh rosemary
6 sprigs fresh thyme
1 tbsp sweet chili sauce
1/4 cup olive oil
1/2 tsp salt
1/2 tsp black pepper
Lemon slices, for garnish
Optional: pinch of red pepper flakes
Instructions
1. Prepare the Oven
Preheat oven to 400°F (200°C).
2. Make the Marinade
In a small bowl, whisk together:
olive oil
garlic
lemon zest
lemon juice
oregano
parsley
sweet chili sauce
salt
black pepper
3. Assemble the Dish
Place fish fillets in a baking dish.
Scatter cherry tomatoes, olives, rosemary, thyme, and lemon slices around the fish.
Pour the marinade evenly over everything.
4. Bake
Bake uncovered for 18–22 minutes, depending on fish thickness, until the fish flakes easily with a fork and the tomatoes are blistered.
5. Finish & Serve
Spoon the flavorful pan juices over the fish.
Garnish with extra parsley and fresh herbs.
Serve with crusty bread, rice, couscous, or roasted potatoes for a beautiful Mediterranean-style dinner.
