輝度とRGBの数値を元にしたグレースケールの比較。
輝度の方が元のイラストの印象と合致しているのがわかると思う。
輝度は人の認知と同じになる様にRGBの各色にデバフをかけた上で計算される

一方でHSV（B）は基本的にVが一定だとしても、単純にRGBの各%がスライドしてる機械的な表示にすぎません。

例を出すと。
R255 G100 B50としたとき、HSVだとVは100となる。
これは単純に大きなチャンネルのパーセントを明度（V）とするからで、GBがどれだけ上下しようと明度は100です。
人の認識を考慮してない情報なんですね。

なので基本画面の明るさを決める際は輝度をベースにして確認しないと人の認知から歪んだ色を置いてしまうかも。

逆に考えれば、輝度ベースで画面が整ってるなら、色相や彩度がどうなってようが見れる絵になっているはず。
