Tipping was always expected because certain jobs paid less. Tips were added for good service and a decent server could do quite well. Prices were stable and it worked.

To remain solvent businesses had to raise prices and cover higher wages. Now these higher percentage tips that are demanded are based on a higher original billed amount. Has the food or the service improved? I would say that both have declined.
