Owner: "I observed you for 30 seconds. I know."
Month ten, owner started a LOG of every customer's preferences.
Handwritten. Over 400 customers catalogued.
Health inspector saw it during a visit. Thought it was a MENU. Tried to read it.
Owner snatched it away. "This is proprietary information."
Inspector: "It's a notebook."
Owner: "It's my LIFE'S WORK."
Month twelve, a food magazine wrote about him. Called him "The Ramen Psychic."
He hated the attention. Started REFUSING new customers.
"I'm at capacity. I can only remember 500 people's preferences."
New customer: "I'll pay extra!"
Owner: "It's not about money. It's about INTEGRITY."
Present day, there's a WAITING LIST to eat there.
Average wait time: 8 months.
I still go weekly. Never order. He just brings me food.
Last week he said, "You've grown. Your palate has matured."
I said, "How do you know?"
He said, "I know everything."
I believe him.
