My favorite part of cooking (besides serving people) is learning. I feel like a major inflection point in my cooking is when I began to understand more about the science of cooking. What is flavor made of? The hows and why’s of texture, thickening agents, etc.
As far as being a slow cook, I think one of the things that comes with experience is grasping the flow of different components of what you’re making and then sorting them by what needs to happen first. Knowing what to prep and when is far more important than how fast you chop vegetables.
