This is a belter of a cheesecake. However, it’s a bit like Marmite, in that most people go crazy for it but some detest it.

PEANUT BUTTER BROWNIE
We’ve tried a few different peanut butters for this, and found the ones that work best are about 95 per cent peanuts, with a bit of oil and salt.

TEMPERING CHOCOLATE
#Chocolate will temper differently depending on the sugar and cocoa butter content, but the recipes in our #book are a good starting point.
There is some tolerance on the temperatures, so try not to stress about absolute accuracy.
