One advantage of runes vs BRC-20 is that if you have a UTXO which has some quantity of runes, you can create multiple PSBTs offering to sell different quantities of those runes from the UTXO, with runestones that transfer different amounts to the buyer and return the remainder the seller.
With BRC-20, you have to pre-commit to the amount of tokens to be transferred in the transfer inscription, which must all be transferred together to the buyer.
The PSBTs would look like:
input runes | runestone
seller input | seller output
| buyer ouput
Where the runestone transfers different amounts of input runes to the buyer output.
I think the seller does have to supply an additional dummy input, so that they can commit to both the runestone output, and the output which receives the BTC, as well as the unsold runes.
Note that even if the buyer includes a cenotaph runestone in their output, it won't turn the transaction into a centoaph, since the runes index only looks at the first runestone in the transaction.
