@amateurgourmet Dorie’s update to Julia’s recipe, as in the LATimes circa … 2004? Requires an overnight for the sponge but best tasting, easy enough to make, and balanced

@wordloaf Yep, mine broke and they wouldn’t honor the lifetime warranty it was purchased under. 😒
Replaced with an Ankarsrum which is superior all-around (although got out of the habit of using a stand mixer while shopping for a replacement).
