@KenForkish Hi Ken - have a question about pure levains in FWSY. Often the dough is so sticky as to be unworkable after bulk fermentation, can't form a boule. I have a hunch it may be over-fermenting - does that sound plausible? What are other potential culprits? My apt is ~78*F. Thx!
