Collop Monday was traditionally the day to use up meat you had in the house before fasting for Lent began. Collops were slices of meat. So, bacon sandwich? Traditional food for today.
Today is #CollopMonday, the lesser-known twin of #ShroveTuesday, & the day where the last of the meat stores were sliced ('colloped') and fried, the fat reserved for tomorrow's pancakes.
