DISTILLING 101: The Block uses open top fermentation for all of the spirits that will go into oak. This allows some "natural" influence from the airborne yeast, souring the ferment and adding depth and complexity to the whiskey. #distilling101 #everydamndrop

DISTILLING 101: distillation is separation by boiler point. In Denver, at elevation water boils at 202F while ethanol, what we drink, boils at 162F. #distilling101 #everydamndrop #whiskey #bourbon #craftdistilling

The Hydrometer. Small and simple in design, but an essential tool around here. Distillers use hydrometers to get an accurate reading on the proof of the alcohol. This let’s us know how much water needs added to cut the spirit down to bottling strength. #EveryDamnDrop
