Since about the 16th century, beignets have been eaten during Mardi Gras by the French. A beignet is a French-style fried square doughnut.
How did it become an iconic New Orleans dessert?
Introduced in Louisiana by French founders of New Orleans and the French Acadians in the 18th century. (The Acadians - Cajuns - were French Canadians who were forced into exile from Nova Scotia by the British, many of whom settled in southwest Louisiana)
Beignets are commonly served hot with powdered sugar for breakfast or as a dessert. They are made by deep-frying choux pastry dough, which puffs up when cooked. The word beignet loosely translates to “fritter” in English.
The beignet has been described as being similar to funnel cakes and fritters, but not as sweet as a doughnut.
I compare it to Native American/Spanish inspired sopapillas.
In 1862, the iconic New Orleans restaurant, Café du Monde, opened and sold the modern beignet, forever marrying the two. To this day, Café du Monde sells beignets around the clock, all days of the week — and it's the only item the business serves, other than its famous coffee with chicory and hot chocolate.
