However, both industries are betting heavily on a pivot and the 'inevitability' of printing when the proverbial shit hits the proverbial fan. CRE debt that can be rolled is getting rolled into I/O, or high rate floating.

Alternately, King Arthur's bread flour. And use literally 1/8 teaspoon of yeast if you feel the need. Lots of great sourdough tutorials on YouTube.

I've done a deep dive on this exact issue for over a decade, and my mom has been able to bake bread daily for our family after many Europe trips.
Make a sourdough with ancestral grains (ideally sprouted flour) and let it naturally ferment
