There’s nothing cloud related to the app outside of if you get the paid subscription but that’s managed by Apple’s encryption

FYI you can change the default space your notes get stored in by long pressing on the send button

By default it’s “Drafts” but you can change it to make organizing notes easier.

It’ll go back to “Drafts” when you close app though
