The original contraption to cook was called a bucan they taught French trappers how to cook this way. That's where you get the term buccaneers.

@OG_Rad_Hatter @Alekillo10 @Scoobydouchebag Actually origin of BBQ is from the Carribean the tainos & arawaks original word was Barbacoa. Barbecue is what it ended up being translated in English. I'm sure they were doing it in Mexico at that time too. But it was first "discovered" by europeans when they came to the islands
