@CookingIssues I’m trying to make an emulation using beef fat/tallow. Is there a way to lower the melting point so the emulsion can be stable at colder temperatures?
“Winterization” and “fractionating” don’t seem like they would work for this, at least not in a normal kitchen.

1oz yogurt syrup (2sugar 1water 1nonfat Greek)
3/4oz lemon
1/2oz mastica
Red wine float.
The tannins of the red wine are not helping but even without the red wine it’s still will look curdled. There are no texture issues and It mixes back together fine
@CookingIssues I’m making a cocktail that uses yogurt about 1/4oz but it starts to separate if untouched over 5-10min. I tried a few stabilizers with out success. I found bols yogurt use’s pectin as a stabilizers. This gives me 10-15min. Any thoughts on a better stabilizer?

I just started growing mushrooms and was wondering Is it possible to sterilize grain using a lower temp but for a much longer time? For example immersion circulator at 90c for 2-3 days.
@adamlaiacano@CookingIssues It looks like it was sold in the us, if that’s the case here is a good website to give you a better idea of when it was bottled. But it’s definitely after 1980 because it is a 750ml bottle and the United States changed from metric to imperial in 1980.

Are botulism spores killed at a lower temperature if heated for a prolonged period of time?
For example making black garlic with garlic that's been vacume sealed.
