I work around a lot of these products. Oatmilk, almond milk, protein drinks, etc. I do the automation programming for making these drinks in batch tanks.

Milk fat is expensive and valuable. A gallon of cream containing 42% milk fat is over $30 a gallon.

What they are doing is trying to add fat content to the drink because they separated out and sold off all the milk fat in the form of cream. Canola oil is one of the cheapest sources of fat. So essentially they are selling all the valuable fat (milk fat), and then replacing it with cheap fats so that their product is not labeled as "fat-free" (because those products sell less).

I highly disagree with the practice because they are making shittier products to have higher profit margins.

What you'll notice is that this product has milk in it. But i can 99.99% guarantee that they use skim milk in this because as I said above, it's way more profitable for them to separate out the cream (milk fat) and sell that for a high amount of money, and then just "add the fat back in" via cheap seed oils at the end.

What you'll find is that a 55 gallon barrel of heavy whipping cream is nearly 30x the price of a barrel of oil. Milk fat in the form of cream is their "gold", so they will do everything they can to sell it separately.
