@DrEmmaBeckett Also frittata - change ingredients for variety - make mini ones in muffin tray, mini meatballs, chicken or pork, with grated veg or diced water chestnut to help lighten the texture. Can also cook the mince mixture and use as filling for ‘hand pies’ with puff pastry (easy to hold)
@DrEmmaBeckett Remove crust from bread slice, flatten with rolling pin. Lightly butter & place butter side down into muffin tin. Add chopped ham/bacon, grated cheese & spring onion/chives/diced tomato/capsicum etc or not. Bake at 180c until egg is set. Eat hot or cold. Can use bread rolls also
