Fed my #leaven today. Going to be moving in a week so I went on the heavy side. 50g starter, 200g AP, 200g water. Has a vegetal flavor, now.

Used my starter to make some pancakes. Didn't taste super sour, which is my goal, but I would have liked a little more flavor.

After a few days in the fridge, my starter smells great. It's got a fizzy mouth feel, though. Anyone know what that means?

Think my starter is strong enough to hold up on its own. 100g start, 200g AP, 200g water. Put it in the fridge, Ill feed it again in a week.

Decided to use 100% AP flour now instead of part rye part AP. Seems strong enough.

Starter is looking good, banana smell is basicly gone, still has a sharp lemon flavor to it. 100g of starter, 200g AP, 200g water.

Feed my starter later than I wanted, but it looked good. Almost twice in size and bubbly. Also floats in water. Smells like alcohol, though.

The sour flavor definitely lowered but now it tastes a little like bananas, which concerns me. I do not want that flavor in my bread.

Equal starter:flour mixture:water to try to get as much yeast in it, but I will gradually lower the amount of starter in each one.

Woke up to a pretty active starter. Some bubbles on top and it tasted very sour, like lemons. Decided to push the first feeding to today.

Mixed up my starter a bit because a skin was forming on top. Tried a little and it tastes kind of like an overripe avocado. #interesting
