Tender beef for stir fry: Slice diagonally against the grain.
Make the kai (not only meaning "sea", "kai" also means dressing/sauce/gravy): 1 t baking soda, 1 T of shoyu, 1 t minced ginger. Lomi ingredients into beef. Add 2 t cornstarch, lomi thoroughly. Refrigerate until used.
