I'd push back slightly and say that only certain types of NFT collections "are expected to produce more things" - specifically PFP collections. The beauty of a collection like https://t.co/KRlA7vATgh is that it's a limited and scarce collection of artworks created by offchain human behavior, and there will only be 365.
And by the time the collection is complete, the whole will be greater than the sum of the parts because each is an archive of how the internet interpreted a specific cultural topic on a specific day. It keeps producing, conceptually, but is valuable because it's intentionally scarce and a snapshot of time
