In 1519 AD, a Spanish foot soldier named Bernal Díaz del Castillo watched the most powerful man in the Americas eat dinner and wrote down everything he saw. His account from Historia Verdadera de la Conquista de la Nueva España is one of the most extraordinary documents ever written.

For each meal, Moctezuma's cooks prepared over thirty different dishes according to their customs and habits, and they placed small pottery braziers beneath the dishes so that they should not become cold. From meat, they prepared more than three hundred plates of the food that Moctezuma was going to eat, and more than a thousand for the guards. A typical royal meal included hundreds of specially made dishes including turkey, venison, duck, pigeon, rabbit, quail, fish and boar, all served on finely decorated and especially delicate Cholula pottery.

Four very beautiful cleanly women brought water for his hands in a sort of deep basin, and they brought him towels. Two other women brought him tortilla bread, and as soon as he began to eat they placed before him a sort of wooden screen painted over with gold, so that no one should watch him eating. The Aztec king was cared for by 3,000 attendants and ate alone behind that gilded screen, entertained by jugglers and acrobats. When the table was finally moved, he inhaled the smoke from tubes of liquidambar mixed with certain herbs which they called tabaco.

The elaborateness of Montezuma's table was not excess for its own sakem it was a demonstration of imperial power, the ability to mobilise the agricultural and culinary resources of an entire empire for a single person's meal, and a mechanism for redistributing that abundance downward through the social hierarchy. The three hundred dishes prepared for his lunch were distributed to his household, his guards and eventually to the poor. Feeding thousands from one emperor's table was the point. The Spanish standing in the adjacent courtyard eating whatever they could find from the market did not have the better arrangement.

The sauces Díaz describes, complex preparations of dried chiles, fresh tomatoes and toasted seeds ground in stone mortars, are the direct ancestors of the mole tradition that defines Mexican cuisine today. The tortillas, the chocolate in golden cups served cold and frothy at the end of the meal, the turkey and venison in elaborate preparations, are all documented in detail by a foot soldier who understood he was witnessing something that had never been seen by European eyes and would never exist in this form again.

Algunas representaciones alcanzan varios metros de altura y siguen despertando asombro por su complejidad y buen estado de conservación, miles de años después de haber sido creadas.

99.5% of Mars has been mapped at 5 meters per pixel. We've had a complete high-resolution mosaic of a planet 225 million kilometers away since 2023.

28.7% of Earth's own ocean floor has been mapped. As of last month.

That camera is falling into what is functionally terra incognita. Miyakojima sits on Ryukyu limestone riddled with hundreds of underwater caves and vertical shafts, some dropping 70 meters through formations older than modern humans. Most have never been surveyed. We know the topography of Olympus Mons better than we know what's 50 meters under a Japanese tourist island.

The reason is physics. Electromagnetic radiation travels fine through a vacuum, so a satellite can photograph Mars from orbit. Radio waves die within meters of entering seawater. Mapping the ocean floor requires dragging sonar equipment across it on ships, line by line, like mowing a lawn the size of 360 million square kilometers. The Seabed 2030 project started at 6% mapped in 2017. Nine years later, they're under 30%.

Over 700 people have been to space. Roughly 27 have reached the bottom of the Mariana Trench. The deepest point on our own planet has had fewer visitors than the Moon.

The ocean is right there. That's the problem. We assumed we could get to it whenever we wanted, so we pointed the telescopes outward instead. And every few months a diving instructor drops a GoPro into a hole and the internet loses its mind because the footage looks like another planet.

Same planet. We just haven't looked yet.
