@harls_quin@wilding_gyres I don't think anybody was arguing that deglazing a pan with water doesn't work, it's just not the same as the Maillard reaction. Using water definitely works to deglaze a pan, totally agree.
@harls_quin@jcbmfcsby@wilding_gyres the Maillard reaction is a caramelization of the sugars inside the onion, deglazing the pan is using a liquid the detach the browned parts of whatever you cooked before from the pan. not related to each other.
@harls_quin@wilding_gyres because it doesn't work. it's not semantics, there is no browning of the onions happening here, he's just bringing the brown stuff on the pan up to the surface. the onions still aren't browned.
