Key distinction here is "associated with". People associate pointed arches with Christianity too, and some will loosely, let's say, call Cologne Cathedral "Christian architecture". But that only tells you what the building is used for. As soon as anyone wants to describe how it looks, they say Gothic, because it is inherently tied to the people and culture that produced it. That exact same Gothic architecture was used for town halls and guild houses, and other buildings that had nothing to do with worship.
In Islam's case, the only real thing the faith itself asks for is a clean place to pray and a wall facing Mecca. How that would look and how the rest of the building is to be built is completely up for grabs. The very first Mosque in Medina was a courtyard with palm trunks holding up a shade roof. That "shared grammar" you mention was picked up later from peoples who already had it. For example the great dome over a wide hall was already a thing in Constantinople way before Muhammad was born, and Ottoman builders studied it for centuries. Or for another example, the iwan (the tall vaulted hall open on one side) comes from pre-Islamic Persia. All this shared grammar belongs to the older Near East, and handed it on to whoever built there next.
This is not to even mention that even these things stayed behind when the religion further spread into other cultures. The Great Mosque of Xi'an uses Chinese courtyards and timber pavilions without a single dome. The Great Mosque of Djenné is a mud brick mass with wooden beams.
If those are "regional variants" of one style, then "style" only means "a building Muslims pray in" which describes a use and says nothing about form.
