@Peter_Fitz Add a cup of water, @wendy_harmer is right, cover in foil. start at 150 for 2 hours then drop to 110 for about 6 hours. Remove foil for last 30 mins and crank to 180 for crisp top. Don't forget to cook with bone in and marinate night before in lemon garlic oil and oregano.
