@AndUpstream @rocks_boffin It works better in a lot of cases, but not all of them. One benefit is that you can pull it off and blow it out, put it back to use. Sanding dry hardwoods it works great. Epoxy or anything that will gum it up, not as good.

@redbirdracing I always go fat side down but that's my personal preference and based on the fact that if I get a hot bed I don't want to burn the meat.

I've done several on skewers but never done one whole bc sirloin is top flavor beef and it's lean, no need for low and slow.
